Well happy weekend! I’ve got a pretty busy few ‘days off’ this weekend {haha, ya right. Mom’s never get time off!} so I’ll make this short and sweet as best I can!

I have a delicious soup recipe to share with you all today…and it’s deceivingly healthy too ?

Friends, meet my latest creation: Lemon Chicken Quinoa Soup.

It’s got lots of veggies, good protein from the chicken and whole grains {plus a little extra protein} from Kroger‘s Tri-Color Quinoa. This soup tastes savory and herby all with a little zing from the lemon. It’s really  just divine…which is saying a lot because {1} its soup I’m talking about and {2} it’s healthy.

Who am I? What have I become? THE HORROR.

If you don’t have quinoa on hand, feel free to use long grain brown rice or whole wheat pasta. Kroger has a good selection. Because I always shop at Fred Meyer {they have competitive prices and free childcare so you can collect your groceries in peace–>I KNOW!!!!} I typically always get Kroger brand. They make a great low calorie spaghetti that tastes great too. Any of these grains/add-ins I mentioned will do, you’ll just have to adjust the cooking time accordingly.
